Hi Geoff, this is not something we've tried here in the test kitchen, but maybe one of our baking friends has experimented with a cider/mashed potato doughnut? I think it would work to substiute boiled cider for part of the liquid, and perhaps some applesauce for some of the mashed potato, but you'll want to keep the moisture/flour content consistent with the original recipe.
