The muffins look great! Could applesauce be used instead of the banana? We have not tried this switch so if you do it will be an experiment. If you do try let us know how it worked. JMD@KAF Don't see why not, Ruc - thicker applesauce, to mimic puréed bananas, would be better than thinner. Good idea! PJH
