I used coconut oil rather than butter and it tastes perfect! Light and fluffy. I also let it rise. I used walnuts and chocolate chips. Yum!!! Mia: did you use the coconut in a liquid state or a solid? I wonder if it made any difference. There can be issues with using coconut oil in recipes (a GF brownie recipe was not as successful with the swap, although the eggs were also replaced with non-egg substitutes).
