I too, have had many different "types" of cobbler's over the years. I make my coobler's the same as shown here, with one exception. I make my buttermilk biscuits and drop my dough on the top of the hot and bubbly fruit. The dough is always baked and the cobbler, be it peach or other fruit, is always soooooo delish! I love it the next day cold, with cream. Oh, you're killin' me! I have some wonderful peaches just getting a bit too ripe... but I'm too tired to turn on the oven! Maybe tomorrow - thanks for the inspiration. PJH
