I was wondering - there is another technique for making Macarons that doesn't involve working with hot syrup. Have you tried that technique? If so, might you also consider discussing what may be a slightly easier alternative here?
Erik, we might get around to alternate techniques in the months to come. Unfortunately, we're usually short on time/personnel, long on projects! I'll definitely mention it to Sue and Andrea in the test kitchen, who developed this particular recipe.
