Sorry to hear this is happening, Janet. This can happen if water, oil, or yolk found it's way into your egg whites. Even the smallest amount will cause this. Perhaps your mixing bowl wasn't quite dry? Also, please keep in mind that separated egg whites from the grocery store may have water added so they will not whip properly. Hope this helps!
