My father lives near Nancy France. They make clafoutis with cherries but also with their signature mirabelle plums. (Tiny yellow plums)
They use less flour (by about half) than your recipe but if I’m honest I like your recipe better. Yes it is usual to leave in the cherry pits for flavor. (You delicately discard them as you eat).
