This sounds like a very yummy recipe. However, I would like to make more of a cupcake instead of a muffin. What adjustments should I make?
First, bake the recipe just as written to see how you like the texture, taste etc. You may decide that you don't want to make any changes at all. If you do decide to make changes, try adding another egg to give the muffin a fluffier texture. You'll lose the denseness that makes it feel like a doughnut though. ~ MaryJane
