Are these muffins good to freeze? If so, how long would they last? I would want to make a lot for a takeaway after a night of partying so it would help my stress levels if I can make them beforehand and then just defrost. Any ideas?
Unless you want to make them weeks ahead, they'd be better not frozen. They're nice and moist, and will stay good, tightly wrapped, for several days. If you HAVE to do them far ahead, then you might consider freezing without the butter/sugar, defrosting, reheating in a 350°F oven, then adding the butter-sugar... Enjoy - PJH
