I have made these muffins twice now- with mistakes. The first time, the oven was on broil instead of bake, and this time I left out the brown sugar. I am usually more on the ball when I bake. :) The broiled ones came out better than you'd think, and we enjoyed them still. This time, they tasted too dry, though not crumbly. The insides felt moist, but were dry to swallow. Then I reread the recipe and that was when I realized I left out the brown sugar. That wouldn't make them dry would it? I love the taste of these, they taste like the doughnuts my grandmother used to make and can't wait to share a good batch with others! Brown sugar does provide moisture, so omitting it would lend to a dry final product. ~Amy
