Hi Jean, if you wanted to reduce our recipe for New England Hot Dog Buns in half, this would yield 5 buns. For best results, we recommend dividing the gram weights in half rather than using the volume measurements, but if you don't have a scale, divide carefully and use this method to measure your flour by cups. While you wouldn't be able to use the New England Bun Pan for a half recipe, you could shape the buns individually by dividing the dough into 5 pieces and shaping each piece into a loose ball. Roll the balls into cylinders, 4 1/2" in length. Flatten the cylinders slightly; dough rises more in the center so this will give a gently rounded top versus a high top. Placing the buns about 1/2" apart on a lightly sprayed parchment lined baking sheet will allow them to grow together as they rise. If you want a New England-style hot dog bun you can cut them down the center part way, as described in this blog post. While these buns will freeze fine, they may be more delicate to cut this way after freezing and thawing.
