I'm glad you were happy with the rolls. I think if you weigh the flour next time you'll see a lighter result. Be sure to adjust the liquid as needed to get that dough that's a little bit tacky when you touch it. Then you know it's got enough moisture and elasticity to rise well and have a fine texture. ~ MJ
