Gums can be very irritating to the intestines and often those with gluten issues need to avoid those as well. You can get the same results with psyllium, chia, or ground flax seeds (http://glutenfreegirl.com/a-guide-to-gluten-free-baking/ is a great source of more info). I made this with a flax seed slurry and it still turned out great.
