PJ, Can you suggest other muffin recipes, like the bran muffins, that the batter can be stored in the refrigerator and the muffins baked in small batches over time? I love that aspect of the bran muffins. Thanks, Willi Willi, I don't know of any other muffins where the recipe calls for you to keep the batter in the fridge for long periods; I've only ever seen this done with bran muffins, for some reason. And I'm still puzzled as to why it works; I'd think the leavener would lose its stuff. But I've never tried this with another muffin recipe; who knows, maybe it works well for others.
