I have made baguettes and the rustic sour dough loaf. Everytime I use the razor to slash the tops of the loaves, it seems to deflate them. What am I doing wrong???? Hi Flo, The loaves should only deflate a tiny bit when slashed. If they are collapsing, they are overrisen. Cut back on the rising time by 15-20 minutes and you should see a noticeable difference. ~ MaryJane
