I too have this problem with a complete large hole...rounded, like a donut, on the bottom of each popover. You can look up inside the popover through it. I'm using my mother's cast iron popover pan and doing the cold oven method. All else same, room temp ingredients, fluff flour, wire whisk, they pop but not a lot. I think maybe it's this cast iron that gets too hot on the bottom?
