Hi there, Susan! After baking, you could certainly fill your popovers with a pudding-type filling using a pastry bag, but if you'd like to add the filling before baking you'll have to experiment a bit. If this is the route you're interested in trying, we'd recommend just adding a dollop of pudding to just a few of the popovers to see how it goes. The filling will most likely sink to the bottom as the popover bakes up around it and you'll want to keep a close eye on them to ensure that the filled ones aren't burning on the bottom.
