Janelle, our popover recipe gets its airy texture from the very enthusiastic whisking it requires. Some folks do add baking powder for extra fluffiness — feel free to give it a try! Piercing the tops shouldn't deflate the popovers at all, just allow the steam to escape. As a matter of fact, it might actually prevent sagging caused by excess moisture.
