Hooray for this blog! I live at 5400’, and I tried a recipe published by New Mexico State University for popovers at high altitude, but it was not a success. Then I tried your method, modifying the recipe as you suggested. I added another egg, and warmed the milk a little. I don’t have popover pans, so I used a muffin tin and filled every other cup. They are still in the oven, but they have popped beautifully. Thank you so much!
