I dont have a machine, Im going to do this by hand. But I need to know how to make the sponge. How much of Ingredients to make it with and how much sponge to use in my recipe. You will just need to combine the sponge ingredients in a small bowl, stir well to combine, loosely cover with plastic wrap, and set aside to proof for 10 to 15 minutes. Then proceed with the recipe.
