thanks so much for explaining why some recipes need this extra step- the sponge. no one ever explained this to me- I thought it was just someone being fussy and that it just added time to the recipe. those are the recipes I would pass up- too much trouble for that extra step! now I won't pass those recipes up- they are probably worth the effort!
