Welcome to the wonderful world of baking! Roll the piece of dough into a 10" x 15" rectangle - period. No need to roll it further. As for folding it in half, that's simply to make it easier to move from rolling surface to parchment paper (or baking sheet). It's easiest to fold it crosswise, move it, then unfold and stretch/pat it back into its 10" x 15" rectangle. Good luck, and remember, we're here to help - call our hotline anytime, 855-371-2253. PJH
