what is the purpose of cooling them off in the oven? What happens if they are pulled out and left to cook on the counter or cooling rack? They wouldn't be as crisp/crunchy, Amanda. The cool-off in the oven makes sure that last little bit of moisture inside the crackers doesn't migrate out to the surface and condense in the cooler kitchen air - by leaving them in the oven, any moisture is dried out as soon as it hits the warmer oven air.
