I grew up eating popovers on Passover and yes, eating them right out of the oven is a real treat but not at all practical when serving at a Seder. I found that when the popovers are removed from their baking tins and cooled completely they can then be stored in ziplock bags and frozen. Allow to defrost in the bags. Transfer them to a rimmed sheet pan and freshen them up in a 350 degree oven for about 5-7 minutes before serving. It works perfectly.
