Thank you so much for your kind words, Anu! We're thrilled to hear that you enjoy our recipes. You could replace the egg called for here with a flax egg replacer or 1/4 cup of fruit or vegetable purée, such as pumpkin, prune, or sweet potato for example. Apple sauce could be used but it may make for a gummy texture. We hope this helps and happy baking!
