These look great. I like the idea of scooping. I've been rolling out sheets of shortbread and then using a biscuit cutter for the cookies. And you have all the pretty colors laid out. It looks great. I've also made jam and chocolate ganache filled shortcake by putting the jam/ganache on first and then another layer of shortbread on top. They're a little less messy in my boys' lunchboxes.
