This cake looks wonderful and I like the idea of using a bundt pan. I'm wondering if I substitute apple for carrot and delete the coconut and pineapple will it effect the mositure content of the cake. Because I live in Maui I'd have to use Macadamia nuts. Give it a try, Logan - I think it'll be just fine. And too bad, living in Maui and having to substitute macadamia nuts! :) PJH
