Hi Cheryl, we haven't tried this recipe using baby carrots, but I think if you use the same amount by weight (347g/ 12 1/4 ounces) it should work. No need to take the cake out of the pan to freeze, although if you make a parchment sling, this could make it easier to remove your cake before freezing, if you would prefer to do it that way.
