I have always made my carrot cake the way my grandmother did using jars of baby carrots. Would I be able to sub in jars of baby carrots in this recipe with good results and how many ounces? Also, if I wanted to make and freeze ahead do I need to remove the whole unfrosted cake from the pan and wrap in cling film or can I leave it in the 9x 12 pan and wrap cake and pan together and toss in the freezer? Thank you!
