First off, Louis: HAPPY BIRTHDAY! How exciting, and thanks so much for making us a part of your special day. Second: these are indeed two very different cakes. And, given it's name, this "Kitchen Sink" version is a bit more "hefty" than our classic Companion version. For instance, this has the addition of brown sugar, as well as a few other variations, that will weigh it down. Though they both have baking soda and baking powder to help lift the cakes up, since they're so full of other goodness. So, as for a solution: since you're doing a "bake-off" why not give this Kitchen Sink version another go with an additional 1 teaspoon of baking soda. That might give it the lift you're looking for. We're excited about all the cake you're going to enjoy, so please do let us know how it all turns out. Have fun, happy baking, and once more, HAPPY BIRTHDAY from all of us up here in Vermont.
