Wow, stacking the cake pans in the oven looks very daring! Any particular reason you didn't space them out on two racks in the oven and rotate part way through baking? Your cake looks absolutely devine! One of my sons is wild about coconut and the other probably would like cake this since it doesn't actually have coconut on it (its a texture thing for him). This recipe would likely delight them both, their dad and me! Now if only I could wave my magic wand and make half the calories disappear. Hi Maggie, Susan is a big fan of keeping the baking in the center of the oven rather than a bit high and a bit low, so she tried the stacking method. You could certainly use both racks if you prefer, it would work just fine. ~ MaryJane Hi, Maggie. The primary reason I don't put pans both high and low (I know Nick Maglieri is all about this method) is that you lose a lot of heat opening the oven door and moving things around. Messes up the bake times, and especially when I'm testing for a recipe, I need to know more accurately how long it's going to take. Susan
