Sue, when baking for 'dairy free' friends I use Fleischman's Unsalted Margarine. It is all veg oil and acts a lot like unsalted butter. I notice the taste difference, but folks on a dairy free diet seem to find it good. The unsalted version is a little difficult to find here in Southeastern Wisconsin, but a call to the Fleischman's customer service line netted me a local store that usually carries it. Good Luck.
