Hi Molly, this recipe is developed with the Gluten-Free All Purpose Flour. It sounds like you may have purchased the Gluten-Free Measure for Measure flour which does already have the xanthan gum added. We would recommend using the flour you have this recipe instead: Gluten-Free Sandwich and Toasting Bread Hope this helps!
