Hi KT! Because gluten free cycles on bread machines differ from the wheat based cycles, in can be hard to bake a gluten free recipe using those cycles. Through our testing, we have found that to create a setting that is similar to a gluten-free cycle, you can program a "homemade" cycle on your machine with a 15 minute preheat, 30 minute knead, 65 minute rise, and 70 minute bake, using a dark crust setting. Now, every brand of bread machine bakes differently, so it may take a few trials to find the perfect timing for your specific model. As for gluten free flours, we have quite a few different blends available...with each blend being best suited for certain types of bakes. For the best results, we always recommend using the specific type of flour that is being called for in the recipe you are working on.
