When a bread is coming out dry (whether it is GF or not), it most commonly has to do with the flour measurement. Do you measure in cups, or by weight Toni? Weighing flour is always the most exact way to measure because a gram is a gram no matter who is doing the weighing! However, I will caution you to know that GF bread will always have a slightly different texture than traditional wheat bread because of the different starches being used.
