Hi Debbie, the Gluten-Free Measure for Measure Flour not only includes xanthan gum but also contains a bit more whole grain flour content as compared to the Gluten-Free All-Purpose flour. Because of these differences it's not likely to perform the same way in this recipe; in fact, we generally don't recommend substituting these flours for one another. However, we do have several sandwich bread recipes that are formulated for this flour, so we'd recommend choosing one of these recipes for best results.
