I have a gluten free friend! This is very exciting looking bread. Do you think it would work just as well in a bread machine?
No, Suzy, I do know from watching my fellow test bakers struggle that it wouldn't work just as well in a bread machine... but they might have made some adjustments to make it "OK." I'll gather some information and get back to you here, or post in the body of the blog. PJHSuzy - Here's the bread machine report from Andrea, one of our GF experts: “I used the quick wheat cycle. It wasn't as good as making it in a mixer. The top was flat, and sunk a bit. Also, I needed to scrape the edges of the pan after 5 to 10 minutes of mixing.”
