Hi Leslie, unfortunately, yeast-raised baked goods are notoriously tricky, both when it comes to gluten-free baking as well as grain-free baking, and it's unlikely to work well to substitute a grain-free flour blend into this recipe. If you do decide to give it a try, be sure to include the xanthan gum and eggs called for in this recipe, which help provide structure in the absence of gluten. You may also have to adjust the liquid in this recipe when you change the flour, since coconut flour is extremely absorbent.
