Hi Kellie. The eggs are very important for the structure of the bread dough in this recipe. We would strongly discourage against a baker making this recipe without eggs. Having baked (and enjoyed) this recipe many times, I do not feel it has an egg flavor or texture and tastes very similar to other gluten free loaves I have tried.
