I have tried this recipe several times with little success. It tastes wonderful which is why I continue to try and make it work. I follow everything exactly. My bread rises fairly well but once it cooks it shrinks again. It is never as fluffy looking or as tall as yours, not even close! It’s mostly a snack toast bread. I can’t use it for sandwiches. I live in Colorado where the altitude is 6,000 above sea level. My yeast is good too. I wanted to know if you have any suggestions I can try to improve its rise. When I ate gluten, I never had this problem.
