Pj's instruction for this bread is well nigh perfect. My 8 1/2x4.1/2 Pyrex pan was small I had to improvise as there was an overflow problem on the final rise. I did weigh the flour but needed another 1/2 cup milk to match the consistency of PJs photo. It did rise beautifully and the texture and flavor were excellent. Gotta get that larger pan or indeed the pain de mie pan would be perfect for size and structure.
