Hi Sylvia! Measure for Measure will give you one good rise, but after that, it simply doesn't have the strength to rise again and hold that rise. It'll work in something that only really needs one rise and then will stay on the flat side after that, like pizza crust. Happy GF baking! Annabelle@KAF
