Hi Sigrid! You'd use your brown rice flour as a 1:1 swap for the Gluten-Free All-Purpose Flour called for in this recipe. If you don't use xanthan gum you'll need to use guar gum or another kind of gum, otherwise, it will be a pile of crumbs with zero structure to hold any of it together — which isn't exactly what we want!
