Hi Nancy, we don't currently have a gluten-free self-rising flour, so we're not quite sure which product you're referring to. For best results, we recommend using our Gluten-Free Flour, though you're welcome to also try using our Gluten-Free Measure for Measure Flour. If you use the latter, consider using half the amount of xanthan gum instead (a scant 3/4 teaspoon). We hope this helps clarify — let us know if we can assist you further. Kindly, Kye@KAF
