Hi Cecilia, we recently wrote a full blog post about how to make dairy-free bread, and our findings apply to gluten-free bread too. You can use your favorite unflavored, unsweetened non-dairy milk. Almond, soy, coconut, and rice milk all work well. Happy baking! Kye@KAF
