Hi Robin, we think you might get a better rise and overall structure in your loaves if you make two batches separately. The batter can be quite heavy, especially if there is a large volume (as there would be when making a double batch). You're certainly welcome to still give it a try if you like, knowing that the final loaves may just be slightly shorter and denser than a single loaf. It'll still be delicious though and perfect for toast! Kye@KAF
