Is it possible to substitute potato or rice starch one to one with tapioca. I have them in the cupboard... but not tapioca starch. No, sorry, Catherine - the recipe is made for tapioca starch or tapioca flour. Luckily, it's readily available - both here, and at Asian and some Latin American markets. - PJH
