Does bobs red mill tapioca starch work for the cheese buns Do they puff up well Can I use shortening for butter We did not test Bob's tapioca flour, but feel free to give it a go! Again, you may need to adjust the flour to get a scoopable batter. Finally, the butter is really important for flavor in this recipe: if you cannot use butter, shortening will be okay (perhaps a flavored shortening would be good to try if there's one with a decent taste).
