I notice there is no leavening. Please describe the texture once they are baked. Hi Mary Ann, These cookies are firm and crisp, slightly moist in the center, but more dry than your average cookie. Not quite as dry as biscotti, not quite as sandy as shortbread. Hope this helps. ~ MaryJane
