This recipe is wonderful!! I followed the exact recipe except that I used a regular muffin pan instead of a mini-muffin pan, sprayed with spray oil. While the cakes seemed to stick to the pan a bit, I did manage to remove them from the pan and put them upside down on a serving plate. They looked nice and puffy at first, but then sunk in the center after a little while. any idea why that might have happened? They still tasted great though!
